It is usually easiest to begin at the top, near the stem. Each pod, when ripe, has a natural seam along the pod, from the top to the bottom. The riper the fruit is, the more visible the seam is. Eventually, if allowed to ripen long enough before picking, the seam will open on it's own. Fresh (unfrozen) durian will continue to ripen.

 

 

Begin by pulling the thorns away from the seam. If ripe, the seam should rip apart fairly easily. For some fruit, you may need to apply more pressure. (If it is difficult to rip open the durian, feel free to help it with a knife!)

Continue pulling the sides of the seam apart to expose the fruit. Be careful not to hurt yourself!

 

Once you open the seam enough, you can grab the edges and pull them apart.

 
Keep pulling and work your way down the fruit.

 

Keep going!

 
Once the pod is open you can reach in and pull out the sections of fruit.

 

There are usually several sections of fruit in each pod. Each section of fruit has it's own large seed. The fruit can be enjoyed straight or used in "ice creams", puddings, and sauces, etc. ENJOY!
