In my book, Vice Cream, I tell how to make coconut milk. This section is for those who want some
instruction on how to select and open a mature coconut, how to remove the "meat",
how to shred it, and how to make delicious fresh raw coconut milk!

From this bowl of coconut, we can make delicious fresh coconut milk.

Place the shredded coconut into a blender container, such as the Vita-Mix. Weaker blenders may be used, but you may need to do smaller batches or add more liquid.

Add back to the coconut, the coconut water reserved when opening the coconut.

Also add the "water" from one young coconut.



As the amount of liquid may vary from one coconut to another, you may need to adjust the amount of liquid. Try to keep the mix as thick as possible to ensure a rich coconut milk.

Cover the blender securely for blending.

If, during the blending process, the mix is too thick for the blender to process, then either add more liquid or split the batch in to smaller batches.

Start the blender on slow and gradually increase the speed to high. As air pockets develop around the blades, you will need to stop the blender and give it a shake to release the air bubbles.

Continue blending to get the mix as creamy as possible. You may need to stop the blender many times in the process.

 

The end result should be a very fine and smooth mixture.

The rich mix is still a bit gritty due to the coconut fiber. That is why we need to separate the liquid from the fiber.
