How to Remove the "Meat" from
a Mature (
brown) Coconut!

In my book, Vice Cream, I tell how to make coconut milk. This section is for those who want some
instruction on how to select and open a mature coconut, how to remove the "meat",
how to shred it, and how to make delicious fresh raw coconut milk!

Removing the "meat":

Once your coconut is open you need to remove the meat. In Polynesia they have a device to scrape the meat out of the shell. This scraping produces shredded coconut. Instead of using such a device, I use a sturdy paring-like knife to cut out small chunks of coconut.

To begin, you need a small paring-size knife, preferably with a rounded tip, such as the one to the left. This is actually a serated steak knife. It is very sharp and easily cuts into the coconut. The rounded tip offers more leverage when breaking chunks of coconut loose. A pointed tip does not work as well.

 

I begin the process by making a cut, about an inch long, into the coconut angled to the right. I cut all the way to the shell.

I next make another cut to the right of the first cut, but angled to the left, meeting the end of the first cut. This produces an upside-down "V" cut.



I then give the knife a slight twist to pop the piece of coconut away from the shell.

I continue the process with a cut parrallel to the last cut.
